I love this book. I've been following the blog forever, so I finally decided to splurge and buy the book. It's full of full-color photos and is very well-designed. I love how it's organized by the colors of the rainbow. I like how the sections are categorized, including the very helpful back section that details sauces and staples--makes for quick reference when I'm in the middle of trying to prepare meals. I love the upbeat and positive tone of the author, and the recipes are easy. Really! Mostly simple stuff--it's just about how you put simple things together to create unique, tasty, and healthy meals. I've been vegetarian most of my life, but have struggled to fully go vegan. I think this book will help me get more and more comfortable cooking and baking without relying on animal-based ingredients. My only tiny tiny complaint is that many of the recipes use a ton of maple syrup, which is really expensive where I live (so we use it very sparingly) and is just a bit too much sweetness for my palate. But because it's a liquid sweetener and could affect the outcome of a recipe, I don't know how to sub for either less maple syrup, or a solid sweetener like sugar (sorry, but I do use a little here and there). I would have liked a little more discussion around this in the intro. Overall a great purchase that will become a working cookbook for you--not just a pretty book to put up on the shelf (though it IS very pretty too!).
I came across this book via a blogger that I follow and I am so glad I did! The beautiful cover and a perusal of Ilene's wonderful website and blog drew me in and I pre-ordered the book.The book is practically laid out by meal but also includes a chapter on kitchen staples and sauces which I always greatly appreciate. It is far easier to reference than when it is included in an entree page. Every recipe has a gorgeous picture which is essential for a good cookbook. Even the index has pictures which is rare!The cookbook focuses on simple and colorful and the associated recipes stay true to this focus. As a busy mom and entrepreneur, I want vegan whole food dishes that don't require 2 plus hours in the kitchen every day. Most of the recipes in this book require active time of 10-20 minutes which is perfect for weekday cooking! There are no hard to find ingredients in this cookbook nor overly expensive ones for those who have limited places to shop. I have many food allergies as well as Celiac disease and found the recipes very easy to modify to suit my dietary restrictions. For oats, I used brown rice flakes or quinoa flakes, for bread I used my own GF vegan bread, for peanut butter and nuts, I used Don't Go Nuts Soybutter and Gerbs seeds. I also used King Arthur GF flour mix and superfine brown rice flour for recipes utilizing flour.So what did I try in the week and a half that I have had this little gem? Quite a bit! The Reubenish Bowl was a BIG hit despite leaving out the saurkraut. The thousand island dressing was fantastic and I will be using it on so many things! The Cheesy Broccoli soup was delicious and we served it with the jazzy avocado toast. I did add a bit more spices than called for as I felt it was a bit bland as is. The miso noodle soup was fantastic and hit the spot on a sub zero day. For breakfast I made the carrot cake oatmeal and Peanut Butter oatmeal using the substitutions I referenced above. I also made the coconut berry toast which has become a staple in my house. There will be plenty more recipes to try this week on my menu plan as I cook my way through this wonderful book.If you are looking for a siimple, delicious and healthy vegan cookbook to add to your colelction this year, I highly recommend The Colorful Kitchen!
I follow The Colorful Kitchen on Instagram and was thrilled to see she wrote a cookbook. All of the photos are gorgeous, and the recipes are definitely colorful!Pros: I don't normally enjoy the introduction of many cookbooks, but I really loved reading Ilene's plant-based journey and how her experience in art and textiles comes through in the food she cooks. Many of the recipes are simple to make and they call for a short list of ingredients. Did I mention they are colorful? I'm excited to make Cinnamon Sweet Potato Fries with Maple PB Sauce and the Whole Roasted Tahini Cauliflower, and a few more.Cons: If you are oil-free like me, this is not a great cookbook as many recipes call for coconut oil, but you could probably still make some of the recipes substituing oil for something else. It's just going to take more effort and perhaps trial and error. There were also a lot of toast recipes, which I found was strange as they are almost too simple to make.*Disclaimer: I received this book from the publisher via NetGalley. Colorful pictures, and great pictures and good recipes for the newbie to plant based cooking! I can only give the book three stars because I am true WHOLE FOOD PLANT BASED, with NO SALT,OIL, OR SUGAR added. Olive and coconut oil are processed foods...not whole food.....Too much coconut and olive oil for me in the recipes so.......I just omit it and sauté in water or veg broth. Save calories too since there are 120 calories in 1 Tbs of olive oil!
What a masterpiece! Ilene is definitely one of the most talented vegan chefs I have ever encountered! Her recipes are so easy to follow, ingredients are from this planet and not neptune haha Usually with vegan recipes, some of the ingredients are hard to pronounce let alone find, but with this book, Ilene includes practical ingredients and easy recipes for every day cooking! The desserts are super YUM and you cant even tell this is all vegan food! If you really want an extra dose of colorful kitchen, you should most definitely follow her Instagram, she posts a ton of pictures from her actual recipes and new ones too! Im just an absolute fan, and for someone who hoards cookbooks, this one is my absolute favorite! Thanks Ilene!
